The real deal burritos will take you back to the drive-through days of your childhood. They are crispy yet soft, creamy yet fresh, and have a MEGA flavor. 10 Ingredients and thirty minutes are all that stand between you and your delicious burritos. Friends, let’s make some burritos!

The smoky “meat” for these MIGHTY Burritos is made from crumbled tofu, which we season with our DIY Taco Seasoning. You can also use store-bought taco spice if you prefer. The result is SO delicious and packed with protein.

It’s time to seal all of the goodness. You now have burritos with protein, fiber, and healthy fats, but they still taste like fast food in the best way. It’s sorcery.

This burrito has a TON of protein, so it’s perfect to refuel after a workout or whenever you feel HUNGRY! Invite some friends over, make Fresh Strawberry Margaritas, and remember the old-fashioned drive-through days.

Ingredients

TOFU TACO MEATS

1 (16 oz.) Package of super firm high-protein tofu*

Use Siete Spice or any other store-bought seasoning.

Half a cup of water

QUICK GUACAMOLE

One large avocado (226g)

Half a tablespoon of lime juice

1/4 teaspoon sea salt

BURRITO

Chop 2 cups of iceberg lettuce

Chop 2 Roma tomatoes (2 tomatoes will yield about 1 cup or 150g)

Four burrito-size flour tortillas (gluten-free as required // We like Siete Burrito sizes).

1 cup Creamy white bean queso

2 cups corn tortilla chips

Instructions

Prepare your White Bean Queso if not done already (or buy it from the store).

TOFU TACO MEATS: In the meantime, heat a large skillet with a nonstick coating over medium heat. Crumble in the tofu. Stir in the taco seasoning. Add the water, and cook for about 5 minutes until the liquid is absorbed. Taste, adjust, and add more taco seasoning as desired. Set aside.

QUICK GUACAMOLE – Add the lime and salt to a small bowl. Mix well, blending it to your desired consistency. Set aside.

Lettuce and tomato should be chopped and left on the cutting board until ready to assemble.

BURRITO – To assemble a burrito in a large pan, heat tortillas on medium heat for 15 seconds on each side. Place 2-3 Tbsp. of queso on the tortilla. Top the queso by adding 1/2 of a cup of tofu meat tacos, 2 tbsp guacamole, and a few tbsp chopped tomato. Also, add 1/2 of a cup of broken chips (crushed). Fold the bottom edge up to meet the top. Then, pull the tortilla forward and tuck in the fillings. Fold the right and left edges of the wrapper up and over so that it looks like an unsealed envelope. Roll the burrito until it is perfect.

Optional: Heat a skillet with a teaspoon of oil over medium heat. Place the folded-side-down burrito in the frying pan and cook it for 1-2 mins until golden. Flip gently and repeat the process on the other side.

Repeat steps 5 and 6 to make the remaining burritos.
