Vegan Vanilla Soft Serve

We all scream soft serve; I cry, and you call! That’s how it works. This classic, fluffy vegan soft serve is creamy and has the same nostalgic goodness that you love. No dairy or ice cream maker is needed.

The story begins with an accident that we had a few years ago. The alcohol in vanilla prevents the coconut milk from freezing. We add the cashew butter and sugar to the coconut milk, vanilla, and sea salt for an extra creamy, sweet, and flavorful dish.

Then, pour the sweet and creamy dairy-free mixture into an Ice Cube Tray and place it in the freezer.

After they have frozen, add the coconut vanilla ice cubes to a processor along with some liquid (in the shape of almond milk). The result? A thick, creamy, SOFT SERVE-style vanilla ice cream in minutes!

It can be served in a bowl or on a cone. Top it with your favorite toppings. Magic Shell is one of our favorites! Caramel, berry, and Hot Fudge also make the list. This would be great for topping cobblers and crisps in the summer. ).

Ingredients

Ice Cubes

1 (13.5-oz.) Can full-fat coconut cream (use a smooth and creamy brand // We used Field Day).

2 Tbsp cashew butter (we like Artisana)

1/4 cup organic cane Sugar

1 1/2 tsp vanilla extract

1/8 tsp of sea salt

SOFT SERVE

Vanilla coconut mixture: 14-16 ice cubes (from above).

Use 2-6 Tbsp almond milk or other dairy-free milk.

FOR SERVING optional

Instructions

Prepare the coconut milk ice cubes at least six hours in advance of your soft serve.

Pour the ice cubes into a blender, add the coconut milk, cashew, vanilla, and salt, and blend for about a minute. The mixture should yield 14-16 standard-sized ice cubes. Freeze for at least six hours.

Add all the ice cubes of coconut milk and almond milk to a high-speed blender or food processor. (Our preferred method is the processor .) Start with the smaller amount, 2 Tbsp. Blend or pulse until the ice has completely broken down. You should have a thick and smooth consistency. It may be necessary to stir it a few more times or to add 1 Tbsp (15ml) of almond milk at a time to make it mix more easily. Use the tamper on your blender to mix.

Enjoy immediately! Place in an airtight container, and then freeze. The texture of the soft serve will change to a firm, creamy, scoopable texture after it has been refrozen. However, it will become much denser and icy. Let it sit for at least 10 minutes before scooping.
