This recipe is a beautiful way to show off your mixology abilities and warms your body with fig, fennel, and cognac. Aquafaba can be used as an alternative to egg whites by vegans.
1/2 oz. St-Germain Elderflower Liqueur
1 oz Cognac
1 tbsp of fig preserve
3/4 oz lemon juice
Half an egg white
Add the preserves to the cocktail shaker, lemon juice, and cognac. Then add the remaining ingredients. Shake without ice first, then add some ice. Shake again. Double strain in a chilled glass. Garnish with pollen, fennel, and fresh fig.

Combine the first six ingredients. Add cava to the glass and, using an atomizer, spray it with St-Germain.
