Our second "Trust the Chef Thursday's" dinner, and Chef Stephen has done it again. Sticky glazed pork belly, spring onion kim chee, carrot puree and crispy pork crackle, then snapper with celeriac puree, honeycomb mushrooms & a shitake mushroom broth, plus red curry roasted pumpkin with coconut marshmallow & puffed rice, and to finish off the meal, lemongrass & rosewater rice pudding with lime curd parfait and ginger praline.
